Our Keto Seafood Boil removes ingredients that are typically not Keto, like potatoes and corn on the cob. We have substituted the potatoes and corn with large chunks of cauliflower florets which are perfect for soaking up the seafood boil broth, which is full of seasonings like Old Bay, bay leaves and slices of lemon to brighten all the flavors. While a seafood boil can include all kinds of seafood like mussels, crab legs, and shell-on shrimp, we made a simpler version using economical ingredients and used shell-off shrimp. If you don't mind peeling shrimp shells, using shell-on shrimp adds to the broth's flavor even more. The shrimp is cooked until it is just pink, so they are nice and tender. Once all the ingredients are cooked, the mixture is removed from the cajun broth onto a platter. The mixture is drizzled with melted grass-fed butter and sprinkled with a generous amount of freshly chopped parsley.

Leftover seafood boil can be stored in an airtight container in the refrigerator for a couple of days. Reheat it in a microwave-safe container or in a saucepan on the stove until hot.

  • Step 1

    Fill a large stockpot with four quarts of water. Bring the water to a boil. Do not add the Old Bay seasoning until the water comes to a boil, or else it will take longer for the water to boil. Once the water is at a boil, add in the Old Bay seasoning, one lemon that has been sliced into ½" rounds, and the bay leaves. Allow the mixture to simmer for 1-2 minutes.

    While the water is coming to a boil, prepare the cauliflower. Trim the end off the cauliflower and remove the stems. Cut the cauliflower into large pieces (about golf ball size). Add the cauliflower to the pot.

    While the cauliflower is cooking, slice the andouille sausage into thin pieces. The shrimp should be prepared ahead of time. If it needs to be thawed, thaw it in the fridge the night before or run cold water over frozen shrimp in a bowl. Prepare the shrimp by draining off excess water. Add the shrimp and the andouille sausage to the pot. Cook until the shrimp begins to turn pink.

  • Step 4

    Remove the shrimp and all the other ingredients from the pot to a platter. Top the mixture with melted butter by drizzling it all over. We like to use grass-fed butter for extra nutrients.

    Sprinkle with freshly chopped parsley. Serve with ½ lemon to squeeze on fresh juice for brightness. Enjoy!
