Take a look at our video that teaches you how to make flapjacks with step-by-step instructions!

Follow the 3 simple steps of our flapjack recipe for the ultimate sweet treat

Step 1

Preheat the oven to 180°C/160° Fan, 350°F, Gas 4 while you combine the butter and Lyle's Golden Syrup in a large non-stick saucepan. Heat gently until melted, then remove from the heat and stir in the oats and salt.

Step 2

Spoon the flapjack mixture into a 20cm (8”) shallow loose-bottomed square baking tin, greased and lined with baking paper. Level and press firmly with a palette knife to smooth. Bake on the middle shelf for 25 minutes, until gorgeously golden brown on top.

Pro tip

Lining the baking tin with parchment paper makes it easy to remove the flapjacks. Once they have cooled in the tin you can slide the whole flapjack on its paper onto a board to cut into pieces.

Step 3

Remove and leave to cool in the tin for 30 minutes. Then lift out of the tin to cool completely on a wire rack. Once cooled, cut into squares that can be picked up and enjoyed by your family and friends.

Pro tip

Flapjacks can be frozen but remember that if they contain moist fruit such as apples or blueberries, they might soften on thawing.

What are flapjacks?

Chewy, classic, and packed full of healthy wholegrain oats, flapjacks are a long-standing family favourite. What’s more, these scrumptious snacks are notoriously simple to make and suit every occasion – from parties and gatherings, to low key evenings in front of the television. Flapjacks are baked bars that are made of just four ingredients: butter, golden syrup, rolled porridge oats and a pinch of salt.

Be careful not to confuse them withAmerican flapjacksthough, which are better known to us as pancakes!

Frequently asked questions about flapjacks

Why do my homemade flapjacks fall apart?

This can happen if you overcook or undercook your flapjacks. When you overcook a flapjack, the golden syrup dries out and it becomes crumbly. An undercooked flapjack will have a raw doughy texture that doesn’t hold its shape. Be sure you are cooking your flapjacks for 25 minutes on 180°C/160° Fan, 350°F, Gas 4 for the perfect chewy bake!

What can I add to flapjacks?

If you’re feeling adventurous, try adding some extra ingredients to your flapjack mix. Some popular additional extras often include berries, chocolate, caramel, raisins, and nuts. The rest of the flapjack recipe stays the same, but you get to indulge in an extra special twist!

Are flapjacks a healthy snack?

While flapjacks are without a doubt a delicious sweet treat, they do contain butter, sugar and syrup. For that reason, we wouldn't describe them as 'healthy' but more as a tasty snack to be enjoyed in moderation.

Should you cut flapjacks hot or cold?

Be careful not to cut them straight after they come out of the oven as they might be too hot and burn you. You also don't want to let them cool down completely before cutting them as they'll be too hard. You should always cut flapjacks while they're still warm so you can easily slice through them and create even, equal slices.

How long will homemade flapjacks keep?

We'll be very surprised if there are any leftovers from your delicious homemade flapjacks, but if there somehow are some that survive, they'll keep for about ten days in an airtight container.

Can you substitute golden syrup for honey in flapjacks? ›

It can be used wherever honey is used, providing a lesser flavour spectrum but saving rather a lot of cost; this would include on porridge, pancakes and waffles, in flapjacks, ginger cakes and similar. To really showcase this ingredient, try making our golden syrup dumplings.

What happens if you put too much syrup in flapjacks? ›

For me, too much golden syrup makes them hard to bite through and dunking is simply not an option with flapjacks. Golden syrup can also make flapjacks sickly sweet. Cooking times and oven temperature are important.

Golden syrup, also known as light treacle, is a by-product of refining sugar cane. It's an inverted sugar syrup that's loved by cooks and enjoyed by the whole family. The golden-colored syrup has a buttery and sweetly caramelised flavour with a rich melt-in-the-mouth texture.

What is the American version of golden syrup? ›

In the U.S., golden syrup is usually sold under the name of light treacle, but it's not readily available in many grocery stores. In cooking recipes, molasses and light treacle are often used interchangeably because their textures and flavor profiles are similar.

Why is my flapjack rubbery? ›

The lumps form because flour contains gluten, a sticky substance that activates when it gets wet and mixed. If gluten is over-mixed it becomes tough, rubbery, and unappetizing.

Why is my flapjack not chewy? ›

Golden syrup is the chewiness activator in a flapjack recipe, so if you want extremely chewy results, add an extra half a tablespoon to this recipe, with 5g less caster sugar. When the flapjacks are pale golden and still very soft to the touch, remove them from the oven.

Why is my flapjack still runny? ›

Your flapjack will not look completely baked when you remove it from the oven. Due to the nature of the ingredients, they will still be quite melt-y, but don't worry – it will set as it cools down. As long as the edges have started to darken and look slightly crisp, it's ready to come out the oven.

Do you cut flapjack hot or cold? ›

Do you cut flapjacks when they're hot or cold? Mary Berry suggests allowing the flapjacks to cool slightly before removing them from the tin and cutting them. I personally find it a bit easier to wait until they have cooled completely and hardened before removing them.

Should you keep flapjacks in the fridge? ›

Flapjacks need to be kept cold and are best stored in the fridge. This will help them hold their shape. If your flapjacks do fall apart in warm weather, just press all the pieces back into the tray as you did before you cooked them and place the tray in the fridge for a few hours. Once cold, you can cut them up again.

According to the company's website, Lyle had strong religious views, which is why the logo depicts the story of Samson from the Old Testament, in which Samson killed an attacking lion, and later noticed a swarm of bees had formed a comb of honey in the carcass.

What is the black around golden syrup? ›

The black can either be from the oxidization of the tin or it could be mold growth. In either case golden syrup only has a shelf life of about two years; or one year after being opened, and it should be refrigerated after opening. The granulation could be fixed by reheating but the black is not worth the risk.

Does golden syrup taste like honey? ›

If you can get your hands on raw honey, you are in for a treat. Golden syrup on the other hand is a by-product from sugar processing and was invented by chemists at Abram Lyle (now Tate & Lyle). It can be easily substituted for honey although I find that the flavour changes slightly.

Can I replace syrup with honey? ›

Honey has an amber color similar to maple syrup, and while it might be a touch sweeter, it makes a wonderful swap. It'll be similar in texture as well, if only a smidge thicker. The only place you may notice a difference in flavor is if you're topping your breakfast with it. In baked goods, it will be negligible.

Can I use honey instead of golden syrup in biscuits? ›

The golden syrup can be substituted and you could use (liquid/runny) honey or agave syrup. But we would mention that honey can have quite an assertive taste when used in cooking, so try to use a very mild-flavoured honey and we would mention that the cookies will not taste exactly the same.

Does syrup work the same as honey? ›

Both offer benefits in the form of either vitamins or minerals, and both offer protective antioxidant activity. Putting taste aside, as the two have different flavors — honey is more floral while maple syrup is more woodsy — maple syrup tends to be the slightly healthier choice, but we enjoy both throughout the year.
