½ cupKetchup
1 tspGarlic powder
¼ tspCayenne pepper
¼ tspChili powder
¼ tspBlack pepper
½ tspWorcestershire sauce
1 TbspFreshly squeezed lemon juice
1 TbspHot sauce
2 TbspPrepared horseradish

Cod Bites

1 pkgShore Lunch Cornmeal Recipe Fish Breading Mix
4 cupVegetable oil
1 lbCod fillets, cut into 1 inch cubes
2 tspCayenne pepper, divided
2 tspGarlic powder, divided
1 TbspFreshly squeezed lemon juice
1 TbspHot sauce
1 Large egg, beaten
1 TbspWater

Directions

Directions for Cod Bites

    Heat the oil in a large stock pot to 350 ºF.

    Add the cod to a medium sized mixing bowl. Add the lemon juice, 1 teaspoon cayenne pepper, and 1 teaspoon of garlic powder and toss to coat.

    Combine the breading, remaining cayenne pepper, and remaining garlic powder in a shallow dish.

    Whisk the egg and the water in a shallow dish.

  • 5

    Dip each piece of the cod in the egg then dredge in the breading. Place the breaded cod on a baking sheet until ready to fry.

    Carefully add the cod, in batches, to the oil and fry for 2-3 minutes.

    Using a slotted metal spoon remove the cod from the oil to a platter lined with paper towels.

  • 8

    Whisk the ketchup, garlic powder, cayenne pepper, chili powder, black pepper, Worcestershire sauce, lemon juice, hot sauce, and horseradish in a small mixing bowl. Serve immediately with the fried cod.
