We are a bit of a fan of biscuits in this house. But, we like them small, not incredibly sweet and they must be crunchy. So I decided to try and make some simple healthier sweet biscuits, with these ticking all the boxes! These bickies are super versatile and I'll show you why later in the week, but for now...let's get started. Because these need to be in your lunchbox!

A lot of the biscuits that have a lot of fame on the internet are filled with sugar and although these contain some sugar, I like to think that these simple healthier sweet biscuits are in fact better for you. These are the perfect swap for other lunchbox packaged biscuits, being homemade means you know exactly what does in them! They are also perfect for ensuring that you're not sending extra packaging to school in the lunchbox.

If you feel like you want to spice this recipe up, add half a teaspoon of cinnamon or half a teaspoon of ginger to make them different to the usual biscuit. They would also be perfect as Christmas biscuits for gift giving as you get at least 40 out of the batch if you keep them small.

Unsurprisingly, these were a big favourite with Master 4. His sister on the other hand prefers the version you'll be seeing later in the week in her lunchbox! These will keep for a week in an airtight container, or just do as I do and freeze them, popping in the lunchbox overnight to defrost.

Ingredients

  • 100 grams butter
  • 1.5 cups plain flour
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 tbsps raw sugar
  • 1 egg
  • 1 tablespoon water

Instructions

  • Preheat oven to 180 degrees

  • Add the butter, vanilla, flour, baking powder, sugar to the bowl of a food processor.

  • Blitz until you've got crumbs.

  • Add the egg and water blitz until a dough forms.

  • Wrap and refrigerate for 20 minutes.

  • Roll out until 4mm thick.

  • Cut into shapes and pop onto a lined tray.

  • Bake for 12-15 minutes on 180 degrees.

  • Cool on a wire rack.

    Thanks for sharing the recipe.
    I didn’t have plain flour or an egg on hand so I substituted 1.5 cups wholemeal spelt flour and a chia egg.
    Turned out perfectly.
    I used a fun Batman cookie cutter so my son is really happy to take these in his lunchbox.

    That's why I love baking because you know exactly what's inside! I can't do no sugar because all my teeth are sweet, but I'm all for a bit of low sugar 🙂 These look ace!
