Slow Cooker Belly Pork

I remember the first time I heard the words “belly pork” I was a kid watching Trading Places for the first time.

I thought belly pork sounded so intriguing and it was many years before I tried belly pork for the first time.

I first tried it in Portugal at a Brazilian buffet, and it was so good.

Then belly pork became something that I would cook when it was in season and on a special deal at the supermarket. It was a Portuguese supermarket and like most Portuguese supermarkets there would often be more pork than any other meat.

When we moved back to the UK, we found a really delicious Brazilian restaurant and what they do is they bring roasted Brazilian meats to your table and carve them at your table. Just like we have experienced in Portugal and in Spain.

But the hero of all the meats was the belly pork and it was loaded in a honey barbecue sauce and was so flavoursome and melted in your mouth.

I had the idea, that when I next saw some pork on a special deal that I would buy some and recreate slow cooker belly pork in a similar way.

Yes, you can cook pork belly from frozen. But only if you are cooking pork belly in the instant pot or the air fryer.

Pork belly in the slow cooker doesn’t get hot enough to kill off bacteria and wont hit the correct internal temperature.

Does Pork Belly Get More Tender The Longer You Cook It?

Yes, pork belly does get more tender the longer you cook it. Just like slow cooker ribs do when you cook those.

I know some cooks will cook their pork belly until its just before falling off the bone so it’s easier to eat, yet I prefer it more tender and will cook them for that extra little bit longer.

What Is Slow Cooked Belly Pork Like?

I find that pork belly and more specifically pork belly slices is like boneless pork ribs. They cook in a similar way and fall apart after being slow cooked.

But slow cooker pork belly is high in fat and its not good if you are on a diet.

Belly – We had many packs of pork belly strips on special offer from Asda. Only problem was that when we cut them up into chunks there was way too many to fit in the slow cooker. So, we did them over two different mealtimes. You can do just one pack or go with two.

Honey – A recipe for belly pork in the slow cooker is not the same without loads of honey to make a delicious sticky sauce.

Garlic – Where there is honey, there is always garlic. You can use garlic puree, garlic paste, crushed garlic or something similar. Or my favourite time saver is some frozen chopped garlic.

Sugar – I also recommend some brown sugar as it helps the sticky sweet belly pork marinade come together.

Extras. Then to make your sticky deliciousness come together you will want some ginger puree, lemongrass puree, soy sauce and Chinese 5 spice.

How To Slow Cook Pork Belly Slices?

  • Slice. Chop your pork belly slices into chunks. I recommend into 3rds but if yours are really big 4ths might be better.
  • Marinade. Load the marinade ingredients into the slow cooker and mix with a spatula. Then add in the pork belly slices.
  • Cook. Next slow cook the pork belly slices for 4 hours on high or 7 hours on low.
  • Sauce. Now you need an empty slow cooker. Drain the liquid from the pork belly slices and put the pork belly to one side. Then load into the slow cooker your sticky barbecue sauce ingredients. Toss the pork belly in the sauce and then serve.

How Long To Slow Cook Pork Belly Slices?

The pork belly cooking time is JUST 4 hours on high or 7 hours on low. You can of course slow cook your belly chunks for 3 hours add the sauce and then cook for a further hour to warm through the sauce.

  • Drizzle the soy sauce over the top of the pork belly slices and then place the lid on your slow cooker. Slow cook your pork belly for 4 hours on high or 7 hours on low.

  • Discard the liquid and put the pork belly to one side. Load the sticky sauce ingredients into the slow cooker, mix well and add your cooked pork belly and mix well in the sauce and then serve.

Notes

Liquid. I find the liquid from the pork belly to be very fatty and don’t save it for a stock. I recommend discarding into a Ziploc bag and then placing in the bin.

Sauce. My favourite barbecue sauce is this one. I first tried it when I lived in Portugal and thought it was amazing and use it in a lot of our barbecue sauces.

Honey. If you can go with a thick honey. It will make a better sweet sauce and tastes much better.
