I know, I know, I'mobsessed with homemade ice cream. I can't help it. It's one of my favorite foods.

I even love ice creamwith breakfast.

If you've never had homemade ice cream with waffles, you've been missing out. Seriously, it's pretty amazing.

Ice cream tends to be a staple for me. Now, I'm not talking about just any ice cream. I'm talking about the real deal, HOMEMADE, healthy, nourishing ice cream.

Making homemade ice creamwith real food ingredients is so important to me.

True, REAL ingredients with no refined sugars, using healthy full-fat organic dairy {and even better yet, raw cream/milk} or rich, creamy coconut milk. Then add in somegood-for-you ingredientslike grass-fedcollagen {good for gut-health} and Celtic sea salt {trace minerals}.

That's one of the benefits of making homemade ice cream, you get to control the ingredients. This means you can make it as healthy and nourishing as you want!

Prep Time: 15 minutes

Additional Time: 25 minutes

Total Time: 40 minutes

True, REAL ingredients with no refined sugars, using healthy full-fat organic dairy {and even better yet, raw cream/milk} or rich, creamy coconut milk.

Ingredients

  • 10 ounces frozen (or fresh) organic strawberries
  • 1 ½ cups raw, organic or grass-fed cream (see Notes for dairy-free version)
  • ½ cup raw, organic or grass-fed whole milk
  • ¼ - ⅓ cup light colored raw honey (see Notes)
  • 1 tablespoon vanilla extract
  • 2 tablespoons hydrolyzed grass-fed collagen - optional (<-- love)
  • ¼ teaspoon Celtic sea salt - optional (<-- salt)

Instructions

  1. Add strawberries, cream, milk, honey, vanilla extract,collagen and sea salt to a blender. Pulse just until combined.
  2. Prepare ice cream maker. Turn ice cream maker on and pour ice cream mixture into the ice cream maker. Churn according to the manufacturer's instructions.
  3. When ice cream starts to have a "soft serve" texture, it's done.* Serve immediately or use a wooden spoon to transfer the ice cream to afreezer-safe container. Cover and freeze until ready to serve. If it's frozen overnight, make sure to remove it from the freezer and set it on the counter for at least 15 minutes before serving.

Notes

YOU WILL NEED:Blender,Ice Cream Maker,Freezer-Safe Ice Cream Container

  • Make sure to use a lighter honey like clover, star thistle or orange blossom {wild flower varieties tend to be too strong for this flavor combo}.
  • I run my ice cream maker for about 20-25 minutes until it's a thick soft-serve consistency. My family loves it like this. If we're not eating it right away, I usually place it in the freezer for a few hours to firm up a bit.
  • Fresh strawberries are wonderful, but try and freeze them ahead of time first. Freezing them helps the ice cream form quicker. If that’s not a option, fresh is fine, it just takes longer for the ice cream to come together.
  • DAIRY FREE VERSION:Substitute full-fat coconut milk for the dairy.
  • If you don’t use raw dairy, look for high quality organic cream from cows that graze on grass {grassfed/pastured}. Ideally, look for products that do not ultra-pasturize their products.
  • STORAGE:Cover in anairtight freezer-safe containerand store in freezer for up to 2 weeks.

    Ah-ha! No wonder my version of strawberry ice cream didn't turn out well! It's because I didn't blend the strawberries! If you don't do this, the ice cream will have a lot of ice crystals in it which isn't very nice. These look great!

      I've done that before too, I know what you mean. I think it helps when the base flavor is solid strawberry, then you could always add in some whole chunks of strawberries once the ice cream starts to firm up a bit, that way you still get bits of strawberries too 🙂

      Using a higher alcohol content helps with that Anna, that's why I use 1 tablespoon alcohol based vanilla. You could also add liquified gelatin but I don't do that in this recipe. When I make a batch we don't usually have leftovers, but if you do, you can just let it sit out on the counter a bit so it softens up.

      Hi Jessica, they are not interchangeable in this recipe as gelatin gels and collagen dissolves in any liquid cold or hot. You can omit the collagen if you'd prefer.
