STEP 1: WHIP HEAVY CREAM

Using your KitchenAid® blender or a large mixing bowl, whip the heavy cream to medium peaks. Begin blending on speed 1, slowly increasing speed to medium. Continue blending until the cream is whipped and voluminous, which will take about 10-20 seconds. Set it aside in the refrigerator.

STEP 2: MELT SUGAR AND DISSOLVE WATER

In the small saucepan over low heat, melt the sugar and dissolve it into the water. As soon as it begins to boil, turn off the heat and allow it to cool.

STEP 3: BLEND CHOCOLATE AND EGGS

WHAT MAKES MOUSSE THICK?
