Homemade Vanilla Pudding Recipe {in the microwave} (1)

Have you ever had homemade pudding? Not the from-the-box-add-the-milk-and-whip vanilla pudding variety… (Although it’s quite tasty…)

I mean the real deal.

My mom was a pro at making homemade pudding. It was her “go to” dessert recipe for a simple, quick dessert and has become for us a comfort food tradition.

How to Make Homemade Microwave Vanilla Pudding

Vanilla pudding only takes a few simple ingredients:

  • 2 cups milk,
  • 1 cup sugar
  • 1/3 cup flour,
  • 2 eggs
  • 1/2 teaspoon vanilla extract

Step by Step Instructions for homemade vanilla pudding in the microwave

1. Mix together all the pudding ingredients while the milk is heating in the microwave.

Place the milk in a microwave safe bowl and place in the microwave for 2 minutes. While it is heating, in a seperate large mixing bowl, mix together the flour, sugar, and eggs.

Once smooth, pour mixture into milk that has been heated slightly in the microwave.

2. Stir the pudding mixture into the milk and heat in the microwave in intervals until it becomes thick, whisking between intervals.

{Remove the metal spoon!} Place the milk that has been mixed with the rest of the ingredients into the microwave and cook in intervals, stirring in between. {This is where you have to “wing it” a bit. My microwave is now 22 years old and is on its last leg. I cooked mine in 2 minute intervals for a total of 6 minutes. However, the newer model microwaves cook MUCH faster. You probably want to try shorter intervals.}

Use a wire whisk to whisk the pudding smooth between intervals.

The pudding will thicken up and look like this when done:

3.Once the pudding has thickened, add in the vanilla extract and stir until combined.

How to serve homemade vanilla pudding

I love to scoop the hot pudding with an ice cream scoop into pretty parfait dishes and serve it hot.

However, it is just as delicious cold. If you want to serve it cold, cover the tops of the scooped out pudding parfaits with plastic wrap that is actually touching the pudding. That will prevent it from getting a “skin” on it.

Then, before serving, remove the plastic wrap and add toppings like whipped cream, chocolate chips, or fresh berries.

Variations for this homemade pudding in the microwave recipe.

This recipe is really fun and easy to adapt to a variety of flavours, too:

  • To make chocolate pudding, use white sugar and add 1/3 cup cocoa to the mixture. OR, make vanilla pudding and stir in some chocolate chips when it is hot.
  • For butterscotch pudding, use brown sugar instead of white sugar and add 1 tsp vanilla flavouring once cooked.
  • For layered chocolate and vanilla pudding parfait desserts. Make a batch of vanilla pudding. Once cooked, divide the batch into 2 bowlfuls. In one bowl, add a handful of chocolate chips to the hot pudding. Stir quickly until melted. Then layer in parfaits ~ one layer chocolate, then one layer vanilla, etc… until full. They look very impressive!
  • To make peanut butter pudding, (my brother’s favourite) add in a big spoonful of peanut butter to hot vanilla pudding.

How to make this homemade pudding recipe on a stovetop

If you don’t have a microwave, no worries! I made this for years on the stovetop before my sister-in-law shared this microwave trick with me. Just remember, heat up the milk slightly first, then add in the pudding mixture. Stir constantly to prevent sticking on the bottom of the pot.

How to use homemade pudding in pies

These pudding varieties can also be used for pies. Just pour the pudding into a baked pie crust. Vanilla pudding over sliced bananas makes a divine banana cream pie.

Microwave the pudding: In the microwave, cook the mixture for 3 minutes. Remove from the microwave, remove the plastic, and whisk the pudding to distribute the heat. Partially cover again and microwave for 1 more minute.

What makes homemade pudding thick? ›

It typically contains milk or cream, although there are non-dairy puddings made with plant-based "milk." Pudding is similar to custard in that they both can contain eggs and milk, but pudding is usually thickened with a starch, whereas custard is thickened by the eggs.

The alternative mix is simply 1 part cornstarch to 2 parts fine sugar, plus 1 part vanilla. I used 1 TBSP. of cornstarch and 2 TBSP. of sugar.

How to make white pudding in the microwave? ›

Microwave: Remove all packaging including casings and clips. Evenly slice, place in a microwavable dish, cover with cling film, pierce film and heat on full power for 2 minutes. Is homemade pudding better than instant? ›

TASTE AND TEXTURE:

The taste of the cooked pudding is much richer and more complex than the instant. It's got a structure to the texture that isn't limp or watery. It feels as though a much more substantial transformation has occurred in the cooked pudding than in the instant. It's thick and slightly lumpy.

What are the three types of pudding? ›

Puddings made for dessert can be boiled and steamed puddings, baked puddings, bread puddings, batter puddings, milk puddings or even jellies. In some Commonwealth countries these puddings are known as custards (or curds) if they are egg-thickened, as blancmange if starch-thickened, and as jelly if gelatin-based.

What to add to instant vanilla pudding? ›

You could stop at vanilla extract and be perfectly content, or you could add fun stir-ins like dulce de leche and pretzels. And if you ask us, the not-so-standard pudding combinations take the dessert from basic to amazing.

Should you stir pudding? ›

Resist the urge to stir

Once your pudding is set and chilling in the fridge, you're done stirring. Nope, don't even give it a swirl before serving up in dessert dishes. Extra stirring after the fact will loosen up the rich texture of the pudding that you worked so hard to create.

How do you keep homemade pudding from getting watery? ›

Don't cover when it's still hot. Do not cover when the pudding is still hot, but should be covered when the pudding has cooled. This is to avoid the presence of steam which makes the pudding runny.

How to make pudding better? ›

Use Evaporated Milk

Replace the regular milk for a can of evaporated milk to make a creamier, more decadent pudding. Not only does it yield a luxurious texture, it dramatically improves the flavor of a pudding mix. For a tropical twist, reach for some canned coconut milk.

How is French vanilla pudding different from vanilla pudding? ›

How long to heat a portion of Christmas pudding in microwave? ›

Unmould the pudding and cut slices then put a slice on a microwaveable dish and cover with microwaveable wrap or a plastic dome, leaving a small gap or hole for steam to escape. Reheat on medium for 1-2 minutes, until hot all of the way through.

Does cook and serve pudding mean instant? ›

Cold vs Hot Pudding? Where do you fall on those choices? For myself, the only choice is hot pudding, which means Cook & Serve Pudding mix. Yes, it takes longer to prepare it than Instant Pudding, but I believe the extra time is worth it, making the pudding more flavorful and rich.

How long do I cook jello pudding for? ›

Pudding Directions: 2 cups cold milk. Beat pudding mix and milk with whisk 2 min. Pudding will be soft-set in 5 min. Makes 4 (1/2-cup) servings.

Steaming is the best way to re-heat a homemade pudding and the only way we recommend re-heating Delia's Christmas pudding. Microwaved puddings are frequently ruined. They tend to overheat and get tough & sticky.
