Homemade Fruit Popsicles a.k.a. Paletas!

Whats’ your flavor kids? Today I’m feeling very berrylicious but you might be in the mood for something different so take your pick from my favorite combinations below.

Why homemade ?

Because they are better than anything you can get in a box of course! No artificial coloring, no processed sugars, just real fruit, plant milk and some maple syrup if you prefer an extra touch of sweetness. I love the balance between the sweet and tangy from the citrus so I always add a little drizzle of maple. Technically a frozen smoothie that looks like a dessert for all life stages: from toddlers to teenagers to adults, everyone is happy!

How Do You Make Popsicles Without a Popsicle Maker?

Reusable molds are the easiest and mostconvenientway to whip up a batch of popsicles anytime. However you can get creative and repurposesomething fromaround the house:

  • Paper or Plastic Cups
  • Large Ice Cube Trays
  • Small Loaf Pans
  • Empty Yogurt Containers.

Are Fruit Smoothie Popsicles Healthy ?

As healthy as they can be. There’s just pure clean and real ingredients, no processed junk, no dairy, only good stuff including all the fiber.

How to Store Homemade Popsicles:

  • Unmold the popsicles or“palettas“ by placing them under some warm running water for about 20 seconds, just until easy enough to wiggle their way out of the mold. Place them in a freezer proof container between sheets of parchment paper up to a month.
  • To preventpopsicle drips on a super hot day use some paper cupcake liners with a slit in the bottom and place thepopsicle stickthrough it. It will catch all the sticky drips before hitting your floors or worse your carpet. You’re welcome kids!

How to Make Creamy Popsicles:

If creaminess is what you are after simply replace the cashew milk in the recipe with equal amounts of cultured coconut yogurt and blend until smooth.

Homemade Real Fruit Popsicles

Ingredients

  • 12 oz frozen fruit i used mixed berries
  • 3/4 cup cashew milk (or coconut yogurt)
  • 1 large orange squeezed
  • 1.5 tsp vanilla extract
  • 1 tbsp maple syrup OPTIONAL to taste
  • 2 tsp lime or lemon juice freshly squeezed

Instructions

  • Prepare 6 popsicle molds and 6 popsicle wooden sticks.

  • Reserve 1/4 cup of the cashew milk and a few berries.

  • In the bowl of a food processor or Vitamin blender process the frozen berries with the orange and lime juice, 1/2 cup of cashew milk, vanilla extract and the maple syrup until a nice rustic texture is achieved. (Pour the mixture into a pitcher with a spout for easy pouring).

  • Add a couple of the reserved berries to each popsicle mold, top with a little splash of the reserved cashew milk and fill with the fruit popsicle mix. Finish with a little splash of cashew milk but leave approximately 1/4 inch of space at the top. Repeat the process with the remaining Popsicles.

  • Freeze your popsicles for 4 to 6 hours until set. Remove from the molds and serve on ice garnished with basil, mint or edible flowers.

Notes

  • To preventpopsicle drips on a super hot day use some paper cupcake liners with a slit in the bottom and place thepopsicle stickthrough it. It will catch all the sticky drips before hitting your floors or worse your carpet. You’re welcome kids!
  • For easy removal make sure to keep the popsicle mold under some hot running water for about 20 seconds. For a few popsicles is best to fill a bowl with the hot water so you can do them all at the same time.
