The majority of Bristol Bay’s sockeye is frozen quickly after harvest, which captures the salmon’s freshness and quality right at the source and enables you to enjoy Bristol Bay Sockeye Salmon all year round. Bristol Bay’s processors and fishermen work together closely to clean the sockeye as quickly as possible after catch (typically within hours of harvesting). After being cleaned, the salmon is then flash-frozen at extremely low temperatures where the salmon’s just-caught freshness and quality is locked in and preserved.

During the peak week (yes, just one week) of the run, fishermen harvest over two million sockeye salmon per day in Bristol Bay!

TIPS FOR DEFROSTING

For best results when defrosting a frozen portion or fillet, thaw the salmon for 8 to 10 hours under refrigeration. If time is tight, an alternative method of defrosting is to put the salmon, still in its vacuum packaging, under cold running water for about 15 minutes.Remove the packaging and proceed with your cooking method.
