Making homemade simple syrup is absolutely my favorite way to jazz up co*cktails, coffee beverages – whether it’s a hot homemade latte or iced coffee – and even mocktails. It’s simple, easy, and takes less than five minutes before you have the perfect flavor addition to add to your favorite beverages.

And when fall rolls around, and everyone is screaming for Pumpkin Spice, I like to mix things up a little bit. While I can’t argue that there’s a time and place for pumpkin spice in all sorts of recipes, there’s so much to love about this Autumn Spice, too. It spans the test of time and fits perfectly in all of your cozy get-togethers.

It’s warm, ultimately cozy, and so good you’ll basically want to eat it with a spoon.

What You’ll Need to Make This Recipe

Alright, the good news here is that you only need a few simple ingredients to make this simple syrup recipe. In fact, any simple syrup recipe is so easy with a few simple ingredients… this one just has a few spices to add to it!

  • Brown Sugar: while a basic simple syrup recipe calls for granulated sugar, this one uses brown sugar for an even more caramelly, warm, hug-in-a-glass type of feel. If needed, you can substitute with granulated sugar.
  • Water: the other essential ingredient for simple syrup.
  • Cinnamon: could we have an autumn spice anything without cinnamon? I think not. You can also use cinnamon sticks for a more real-spice vibe if you prefer.
  • Allspice: tastes like a warm combination of cinnamon, nutmeg, and clove. It’s essential in Caribbean cooking, and in the U.S. it’s commonly used in fall-inspired desserts.
  • Coriander: it’s delicate, and earthy, with slightly sweet and spicy notes with a touch of citrus, which perfectly balances out this spice-filled syrup.

Recipe Steps

This is such an easy recipe, that it feels like kind of a not-recipe. It comes down to boiling, and….that’s it. Simple syrup is an equal mixture of water and sugar, and this version just has those delicious spices added. Easy, peasy!

Combine the brown sugar, water, and spices in a saucepan, whisking them together until they’re combined.

Bring everything to a boil and let it simmer for 4-5 minutes, allowing the ingredients to dissolve together while the flavors of the spices open up and release all their goodness.

Once they’ve simmered, it’s time to let the syrup cool. I totally get being impatient when you’re ready to make some co*cktails…but be sure to let it cool enough that it won’t water those drinks down!

You can strain out the spices if needed – the allspice and coriander are a little coarser than the cinnamon. Or if you used whole cinnamon, you’ll need to strain that too. Otherwise, just let it be!

How to Use Autumn Spice Syrup

Let me count the ways…

There are endless ways you can use simple syrup. One of the most favorite ways, is, well, in co*cktails! Take for instance a Bourbon Cider co*cktail… or a new version of Hot Buttered Rum.

It’s also naturally amazing in homemade lattes or even your everyday brewed coffee. And if you’re one of those love-cold-drinks-in-winter types of people, mix it in your cold brew or iced lattes.

In fact, dipping apples in this syrup is also a perfect idea. Go ahead, give it a try.

Storage Tips

Store the syrup in an airtight container, like a jar, in the fridge and it will be ready to use when you need it! Simple syrup with spices will last 1-2 weeks in the fridge in an airtight container.

This Autumn Spice Simple Syrup isn't Pumpkin Spice…it's better. It's warm, rich, and full of flavor with fall spices of cinnamon, allspice, and coriander.   • Whisk together all ingredients in a small saucepan.

    ½ cup water, ½ cup brown sugar, ¼ teaspoon cinnamon, ⅛ teaspoon ground coriander, ⅛ teaspoon allspice

  • Bring to a simmer, and continue to simmer for 4-6 minutes to allow the flavors to develop.

  • Let cool, then store in an airtight container in the fridge until ready to use.

    FYI Allspice is a spice unti itself, it is NOT a combination of anything. Whole allspice looks like small berries and is used in many traditional Jamacan recipes. I am leaving you this link for tour edification:

      Hey Luan – Thanks, I do always love to learn, but I am confused where the call out is coming from. No where did I state allspice is a combination of spices; I noted it tastes like XYZ to help those who don’t know what it is get a better idea of its flavor, in the easiest way possible. I did also note its use in Caribbean cuisine. I hope this helps clear up any confusion.
